Gedeb is home to thousands of coffee-farming families producing some of the most incredible coffees in the world, in ‘Coffee gardens’ on less than 5 hectares and intercropped with other food crops. Cultivation methods remain traditional. Most farms are organic by default. Ripe cherries are delivered to a wet mill, where they are graded, and defects are separated and finally placed on raised African beds. Coffee is shaded between 12-3 p.m. and frequently turned for steady drying until it reaches 11.5% in around 12 – 17 days, depending on weather conditions.
